Following a FAO/WHO workshop on food allergen risk assessment held in Nanning, China in September 2025, a report has recently been published, offering insights into global efforts to strengthen capacity in understanding and managing food allergen risks.
The workshop brought together representatives from government, industry, academia and international organisations, alongside Codex representatives contributing to global food allergen standards. A central theme was the application of a risk-based approach, enabling consistent and proportionate decision-making across different food systems.
Through expert presentations, case studies and interactive exercises, meeting participants explored the latest FAO/WHO methodologies for assessing allergen risks. These sessions reinforced that food allergens require distinct consideration within food safety frameworks, taking into account exposure levels, consumption patterns and real-world production conditions.
A field visit to a dairy production facility provided practical insight into how allergen risk assessment is applied in industry. Participants observed how measures such as segregation, cleaning systems and production controls can effectively minimise cross-contact risks when supported by strong food safety practices.
Despite these advances, participants highlighted ongoing challenges, including inconsistent regulatory frameworks, limited technical resources and the need for more practical, user-friendly guidance, particularly in resource-constrained settings.
The workshop concluded with a call for continued collaboration across Codex committees, national authorities and industry, alongside the development of practical tools and regionally tailored training. A globally-harmonised, risk-based approach was identified as key to improving consumer protection, supporting transparent labelling and facilitating international food trade.
